Sri Lankan Coconut Energy Balls

Ingredients

  • 1 1/2 cups of shredded coconut (or roasted coconut)
  • 1/2 cup of chickpea flour
  • 1/2 cup of pitted dates
  • 1/4 cup of jaggery (sub for brown sugar)
  • 1/2 tsp of cardamom powder
  • 2-3 tbsp of warm coconut milk
  • 1/4 of crushed cashews

Directions

  1. Combine all the ingredients into a bowl and then rolls into gold size balls. Store in the fridge for up to a week!
