Banana & Coconut Pancakes

Ingredients

  • 1 Banana
  • 1/2 cup of coconut
  • 1 scoop of protein powder
  • 1 egg
  • 1 tsp of jaggery (sub for brown sugar)
  • 1 tsp of cardamom powder

Directions

  1. Combine all ingredients in a food processor to create batter.
  2. Pour 1/2 cup of batter into a buttered pan over medium heat. Cook on both sides (about 2 mins).
  3. Serve with coconut shavings, maple syrup and fruit!
