Sri Lankan Mango Curry

Sri Lankan mango curry is one of those dishes that hits all the right notes—sweet, sour, and a little spicy. It’s the perfect way to use up green or not-so-sweet mangoes, turning them into a rich, tangy curry that pairs beautifully with a plate of hot rice. The flavor comes from a mix of bold spices, caramelized jaggery, and a splash of tamarind for that signature tang.

What makes this curry so special is how comforting and vibrant it feels at the same time. The mango softens into the sauce, soaking up all that spice and sweetness, while the tamarind gives it a zesty kick. It’s simple, packed with flavor, and a true Sri Lankan favorite you’ll keep coming back to.

Description

Sweet, tangy Sri Lankan mango curry with tamarind, spices, and jaggery – perfect with rice on a cozy day!

Ingredients

Instructions

  1. Start by cleaning and peeling the mangoes. Slice them into wedges and place them in a bowl of water with a generous amount of salt. Let them soak for at least 30 minutes. (If you’re using sweet, ripe mangoes, you can skip this step.)
  2. Next, heat some oil in a wok. Once hot, add curry leaves, red onion, garlic, ginger, and green chili. Sauté until fragrant, then add all the spices. Mix well and cook on medium heat for a few minutes.
  3. Add the drained mango wedges, followed by chopped jaggery (or brown sugar).
  4. Let it caramelize for about 5–8 minutes, then stir in the tamarind paste.
  5. Cook until the mangoes are soft and fully cooked through.
  6. Remove from heat, let it cool to room temperature, and serve with rice. Enjoy!
