This noodle stir-fry is seriously the perfect middle-of-the-week pick-me-up when you’re sick and tired of your usual meal prep but still wanna eat something healthy. Loaded with punchy garlic, fresh curry leaves, and a little heat from dried chillies, these noodles soak up a tangy, slightly sweet sauce that hits all the right spots. I used pumpkin noodles to keep it light, and topping it off with a crispy fried egg just makes it next-level satisfying. Quick, flavorful, and easy — exactly what you need when you want good food without the fuss.

Description

Quick, tasty Sri Lankan garlic noodles with a fried egg—perfect midweek meal when you want something healthy and super simple!

Ingredients

Instructions

  1. Boil noodles according to package instructions. Drain and set aside.
  2. Heat 1 tbsp coconut oil in a pan over medium heat.
  3. Add 6 garlic cloves (sliced), 10–12 curry leaves, and 1 small sliced onion. Sauté until fragrant and onions soften.
  4. Toss in 1–2 crushed dried red chillies and ½ tsp chili flakes. Stir for 30 seconds.
  5. Add the cooked noodles to the pan.
  6. Pour in 1 tbsp soy sauce, 1 tsp vinegar (or lime juice), 1 tbsp ketchup, and 1 tsp sugar. Mix well to coat the noodles.
  7. Season with salt to taste. Top with chopped spring onion and a crispy fried egg. Serve hot!
