You get the creamy coffee-chocolate buttercream filling, the sweet glaze, and that iconic crunch from Maria biscuit crumbs on top—just like the layers of the original pudding. Biscuit Pudding Donuts
Description
Biscuit Pudding Donuts – Coffee-glazed donuts filled with rich mocha buttercream, topped with biscuit crumbs for the ultimate sweet treat!

Instructions
- Start by making the donut dough. Combine 2¼ tsp yeast with 75 ml warm water and a pinch of sugar. Let it sit for 5–10 minutes until foamy.
- In a large bowl, mix 300 g flour, 40 g sugar, a pinch of salt, 2 eggs, 50 g melted butter, and the yeast mixture.
- Knead into a soft dough (by hand or using a mixer). Cover and let it rise until doubled in size (about 1–1.5 hours).
- Once risen, roll out the dough to about ½ inch thickness and cut out donut shapes. Let them rest for 30 minutes. Then, deep fry on medium-low heat until golden and cooked through. Set aside to cool.
- Meanwhile, make the buttercream by creaming together room-temperature butter and icing sugar.
- Gradually mix in coffee, cocoa powder, and vanilla extract until smooth. Cut small holes on the top of each donut, remove the tops, and pipe in the buttercream. Press the tops back on securely.
- For the glaze, whisk all the glaze ingredients until smooth. Dip each donut into the glaze, then sprinkle with crushed Maria biscuits.
- Let the glaze set, then pipe a little more buttercream on top and garnish with a quarter piece of Maria biscuit. Enjoy!
