Low Carb Roti
Ingredients
- 2 cups whole wheat flour
- 2 cups of spinach
- 1 tsp salt
- 2 tbsp oil
- 3/4 cup of water
Directions
- Place the spinach, flour, and salt in a food processor and blend until well combined.
- In a bowl, mix the water and oil, then add the spinach-flour mixture. Stir until a dough forms.
- Divide the dough into 12 equal portions and roll each into a ball. Flatten each ball into a disc about 5-7 cm in diameter, dusting with a little flour to prevent sticking.
- Lightly oil a cast-iron pan and cook the rotis, frying each side until golden brown and slightly toasted.
- Serve hot with your favorite curries!
