High Protein Chickpea Bowls

This high-protein bowl brings all the traditional Sri Lankan flavors into a healthy, hearty, and vegetarian-friendly meal. Its packed with 30g of protein and only 375 calories for a filling meal! We’re combining the iconic spicy chickpea fry— a staple in Sri Lankan snacking culture— with a crunchy carrot and cabbage sambol. Served over a bed of fluffy brown rice, this bowl is packed with perfectly seasoned chickpeas and fresh veggies. To balance the heat, it’s topped with a refreshing raita made from yogurt, cucumber, and herbs. It’s not just filling, but loaded with protein and wholesome ingredients, making it a nutritious and satisfying option!

Ingredients

  • Spicy Chickpea
  • Carrot & Cabbage sambol:
  • ¼ head of cabbage
  • 1 cup of shredded carrot
  • 1 cup of shredded coconut 
  • 2 long green pepper 
  • salt & pepper
  • Raita Sauce:
  • ½ cup high protein greek yogurt
  • ½ tsp graham masla 
  • ½ tsp cumin 
  • ½ salt 

Directions

  1. Prepare Spicy Chickpea
  2. Carrot & Cabbage Sambol:
    In a wok, heat some oil and toss in the shredded carrot, chopped cabbage, and green peppers.
  3. Sauté until the veggies start to soften. Add shredded coconut, season with salt and pepper, then remove from heat and set aside.
  4. Raita Sauce:
    In a bowl, whisk together the ingredients until smooth and well-combined.
  5. Assembly:
    In each bowl, layer 1 cup of brown rice, a serving of the spicy chickpeas, a generous helping of the sambol, and some chopped raw red peppers on the side. Finish by drizzling the raita sauce over the top.
