The Sri Lankan Tusker cocktail is a fun and delicious twist on the classic whiskey sour, swapping out whiskey for dark rum to give it a sweet, floral punch. Traditionally, this cocktail is made with Ceylon arrack, a distinctive Sri Lankan spirit. This arrack has a golden hue and and is made from coconut palm sap to give its sweeter flavour. However, since this type of liquor is hard to find in Canada, we’re using Leblon Cachaça instead. This Brazilian rum has a similar sweetness and nuttiness that works perfectly in our cocktail.
To whip up this tasty drink, you’ll combine your rum with a few dashes of peach bitters, some sugar, fresh lime juice, and an egg white. The result is a cocktail that’s bold, smooth, and refreshing, with just the right amount of frothiness from the egg white. If you prefer a lighter flavor, you can add a splash of ice water.

can you make it vegan?
You can simply omit the egg white, but you might want to add a splash of water to mellow out the intensity of the drink.

Ingredients
- 1 oz of Leblon Cachaca (Ceylon Arrackas if you can find it!)
- 1 oz of lemon juice
- 2 tsp sugar
- Few splashes of peach bitters
- ½ oz of water
Directions
- Dry shake all ingredients in a cocktail shaker without ice.
- Strain over a glass of ice and top with the egg white foam and garnish with a mint leaf.
