Sri Lankan Coconut Energy Balls
Ingredients
- 1 1/2 cups of shredded coconut (or roasted coconut)
- 1/2 cup of chickpea flour
- 1/2 cup of pitted dates
- 1/4 cup of jaggery (sub for brown sugar)
- 1/2 tsp of cardamom powder
- 2-3 tbsp of warm coconut milk
- 1/4 of crushed cashews
Directions
- Combine all the ingredients into a bowl and then rolls into gold size balls. Store in the fridge for up to a week!
