When I only have 20 minutes to cook, I whip up this Sri Lankan Soy Sauce Chicken—a perfect fusion of bold flavors! It comes together in just 20 minutes and pairs beautifully with plain rice. The best part? No marinating required!

The chicken is simmered in a rich blend of soy sauce, fish sauce, and garlic, creating a deeply flavorful base. It’s then seasoned with a spice mix of salt, pepper, chili powder, and cumin, adding a warm, spicy kick that perfectly complements the umami richness of the sauces. Serve it over rice or with roti, and you’ve got a deliciously satisfying meal that’s sure to impress.

Spiced Soy Glazed Chicken

Ingredients

  • 6 Chicken thighs
  • 4 cloves of garlic 
  • ½  tsp salt
  • 1 tsp pepper
  • 1 ½ tbsp soy sauce
  • 2 tsp of fish sauce
  • 1 tbsp white vinegar 
  • 1 tsp of cumin
  • 1 tsp chilli powder

Directions

  1. In a pan, lightly toast the garlic until fragrant, then add the chicken thighs. Sear both sides until they’re golden brown.
  2. Pour in the soy sauce, fish sauce, and white vinegar, and let it simmer for a few minutes.
    Next, stir in the remaining spices and continue cooking until the chicken is fully done. Once cooked through, remove the pan from heat.
  3. To make the raita, simply mix all the ingredients together. Serve the chicken over brown rice with a side of raita for a delicious and filling meal.
