To balance the heat, it’s topped with a refreshing raita made from yogurt, cucumber, and herbs. High Protein Chickpea Bowls
Ingredients
- Spicy Chickpea
- Carrot & Cabbage sambol:
- ¼ head of cabbage
- 1 cup of shredded carrot
- 1 cup of shredded coconut
- 2 long green pepper
- salt & pepper
- Raita Sauce:
- ½ cup high protein greek yogurt
- ½ tsp graham masla
- ½ tsp cumin
- ½ salt
Directions
- Prepare Spicy Chickpea
- Carrot & Cabbage Sambol:
In a wok, heat some oil and toss in the shredded carrot, chopped cabbage, and green peppers. - Sauté until the veggies start to soften. Add shredded coconut, season with salt and pepper, then remove from heat and set aside.
- Raita Sauce:
In a bowl, whisk together the ingredients until smooth and well-combined. - Assembly:
In each bowl, layer 1 cup of brown rice, a serving of the spicy chickpeas, a generous helping of the sambol, and some chopped raw red peppers on the side. Finish by drizzling the raita sauce over the top.
