Need a quick, high-protein meal that actually tastes amazing? Say hello to this Sri Lankan-Style Salmon Bowl—your new go-to for meal prepping like a pro or just whipping up a fast, flavorful dinner. We’re talking flaky, spice-rubbed salmon, coconut-kissed rice, and a fresh, zesty sambol that brings everything together like a dream. Oh, and did I mention it’s ready in 20 minutes? No fuss, no stress—just delicious, nourishing food!

Ingredients

  • 4 salmon fillets
  • 1/2 cup low fat mayo
  • 2 cloves of diced garlic
  • 1 tsp turmeric
  • 1 tsp chili flakes
  • 1 tsp salt
  • 1 tsp chili powder
  • squeeze from half a lime
  • Bowl Ingredients:
  • 1 cup of cooked white rice
  • 1/2 cup of diced tomato
  • 1/2 cup of diced cucumbers
  • 1/2 cup of edamame

Directions

  1. Clean and pat dry the salmon fillets with a paper towel, then place them on a parchment-lined tray.
  2. In a bowl, mix all the seasoning ingredients until well combined, then rub the mixture evenly over the fillets.
  3. Pop the tray into a preheated oven at 420°F and bake for 15 minutes, or until the salmon is perfectly flaky.
  4. Pair with rice and fresh veggies—I went with diced tomatoes, edamame, and cucumbers for a refreshing crunch!
