- Toss shrimp with chili powder, garlic salt, black pepper, salt, soy sauce, and lemon juice. Set aside 10 minutes.
- Slice onion, peppers, green chilies, and chop garlic.
- Heat oil in a wok or large pan. Fry shrimp until just pink, then remove and set aside.
- In the same pan, add garlic, onion, curry leaves, and chilies. Cook until fragrant.
- Stir in red and yellow peppers. Cook for 2ā3 minutes until slightly tender.
- Sprinkle curry powder and fish sauce, mixing well.
- Toss in the cooked rice, breaking up clumps. Stir-fry everything together.
- Return shrimp to the pan and mix until well combined.
