Easy Pumpkin Muffins

These easy Pumpkin Muffins with Chai flavours are the perfect autumn treat! Infused with warm chai spices like cinnamon, cardamom, ginger, and cloves, they bring a cozy, aromatic twist to classic pumpkin muffins. Moist, fluffy, and bursting with pumpkin goodness, these muffins are simple to whip up and make a delicious breakfast, snack, or dessert. The blend of spices pairs perfectly with the natural sweetness of the pumpkin, making each bite warm and comforting. I love having them in the morning with a cup of tea to start the day!

Ingredients

  • 1 ¾ cups of flour
  • 1 tsp baking powder 
  • 1 ½ tsp cinnamon
  • 4-5 cardamom pods
  • 4 cloves
  • 1 tsp nutmeg
  • 1’’ knob of ginger
  • ½ cup of softened butter
  • ½ cup of brown sugar 
  • 1 cup of pumpkin puree
  • 2 eggs
  • ¼ cup of milk

Directions

  1. Preheat the oven to 350°F.
  2. Using a mortar and pestle, lightly crush the cardamom pods, cloves, and ginger.
  3. In a saucepan, heat the milk over medium heat, adding the crushed spices and ginger. Just before it starts to boil, remove from heat.
  4. In a large bowl, cream together the sugars and softened butter. Add the eggs and pumpkin puree, mixing until smooth.
  5. Strain the spiced milk to remove the whole spices, then slowly pour it into the batter, stirring as you go.
    Fold in the dry ingredients, gently mixing until you get a thick batter.
  6. Spoon the batter into muffin liners and bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
