Easy Pumpkin Muffins
Ingredients
- 1 ¾ cups of flour
- 1 tsp baking powder
- 1 ½ tsp cinnamon
- 4-5 cardamom pods
- 4 cloves
- 1 tsp nutmeg
- 1’’ knob of ginger
- ½ cup of softened butter
- ½ cup of brown sugar
- 1 cup of pumpkin puree
- 2 eggs
- ¼ cup of milk
Directions
- Preheat the oven to 350°F.
- Using a mortar and pestle, lightly crush the cardamom pods, cloves, and ginger.
- In a saucepan, heat the milk over medium heat, adding the crushed spices and ginger. Just before it starts to boil, remove from heat.
- In a large bowl, cream together the sugars and softened butter. Add the eggs and pumpkin puree, mixing until smooth.
- Strain the spiced milk to remove the whole spices, then slowly pour it into the batter, stirring as you go.
Fold in the dry ingredients, gently mixing until you get a thick batter. - Spoon the batter into muffin liners and bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
