- Preheat your oven to 350°F (175°C).
- Season the pork belly generously with salt and pepper.
- In a cast iron pan, heat up oil and toast the cinnamon.
- Once fragrant toss in the sliced pork belly. Once its browned add in the remaining spices. Let that come together for at least 5 mins and then add the coconut milk.
- Cook for 5 more mins and then cover with tin foil and place in the oven for 40 mins or till the oil separates. Give it stir about half way through.
- Remove from the oven, discard the cinnamon sticks and serve over some fluffy white rice.
