EASY & QUICK Weeknight Meal

This noodle stir-fry is seriously the perfect middle-of-the-week pick-me-up when you’re sick and tired of your usual meal prep but still wanna eat something healthy. Loaded with punchy garlic, fresh curry leaves, and a little heat from dried chillies, these noodles soak up a tangy, slightly sweet sauce that hits all the right spots. I used pumpkin noodles to keep it light, and topping it off with a crispy fried egg just makes it next-level satisfying.
