Chicken Sausage Jacket Potato
Ingredients
- 2 large potatoe
- 5 chicken sausages/hot dogs cut into 1 inch pieces
- 1⁄2 red onion chopped
- 3 garlic finely chopped
- 1/2 tomato diced
- 5-6 curry leaves
- 2 bird’s eye chili
- 1 tsp salt
- 1 tsp chili powder
- 1 tsp freshly ground black pepper (adjust as you like)
- 1 tbsp sweet & sour sauce
- 2 tsp olive oil
Directions
- Wash potatoes and prick all over with a fork. Microwave for 6 minutes, turning every 2 minutes.
- Rub with olive oil, wrap in foil or parchment, and bake at 375°F for 25 minutes.
- While baking, chop chicken sausage. Heat oil in a pan. Add curry leaves, garlic, chili, and onion. Sauté until fragrant.
- Add sausage and brown well. Mix in spices and sweet & sour sauce. Turn off heat and stir in diced tomato.
- Unwrap potatoes, cut in half, fluff the inside, and season with salt.
- Top with the chicken sausage mixture and garnish with green onions.
