15 min Egg Sheet Pan
Ingredients
- 1/2 cup Greek yogurt
- 4 curry leaves (chopped)
- 1/4 cup parsley
- 1 green chili
- 1 tsp salt
- 1 tsp cumin
- 1 tsp turmeric
- 1/2 red onion
- 1/2 cup of paneer (chopped)
- 1/2 tomato
- 6 english muffins
- 6 slices of mozzarella cheese
Directions
- Combine all the ingredients in a bowl and whisk until well combined.
- Pour into a parchment lined baking tray and bake at 420°F for 10 mins.
- Cut the egg sheet pan into rectangles and start assembling your breakfast muffins. Toast the English muffins, melt a slice of cheese on top, and stack a few egg rectangles for a hearty, flavor-packed meal.
