Say hello to your new protein-packed bestie! 🥪 This tuna and egg salad sandwich takes a detour to Sri Lanka for a flavor-packed adventure. Imagine creamy mashed hard-boiled eggs and flaky tuna mingling with a hit of curry powder and a dollop of cottage cheese (packing as much protein as possible!). Add in a pinch of cumin, chili powder and a hint of mustard for that extra “oomph.” All this goodness is piled onto toasted bread, topped with crisp lettuce, and ready to deliver 20g of protein in every bite. Perfect for your post-workout munch or just leveling up your lunch game.
Tuna & Egg Salad Sandwich
Ingredients
- 1 can of tuna
- 3 hard boiled eggs
- 1/4 red onion (diced)
- 2 cloves of garlic
- 1/4 cup of chopped parsley
- 1 tsp of curry powder
- 1 tsp cumin
- 1/2 tsp chili powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup of cottage cheese
- 1 tbsp of Dijon mustard
- 2 slices of whole wheat bread
- 1/2 cup of chopped lettuce
Directions
- While the eggs are boiling (8–9 minutes for perfectly hard-boiled eggs), finely chop the vegetables.
- Once the eggs are done, transfer them to an ice bath to cool, then peel and mash them.
- Combine the mashed eggs with the chopped vegetables and other ingredients in a bowl, mixing thoroughly.
- Let the spread chill in the fridge for 30 minutes. Serve on toast with chopped lettuce for a delicious and filling sandwich.
