PERFECT DESSERT FOR AUTUMN
This no-bake fall dessert is the ultimate cozy treat—easy to whip up, no oven needed, and packed with seasonal flavours! Think layers of chai-soaked biscuits, creamy pumpkin frosting, and a sweet apple-cinnamon compote, all stacked together to make a rich, spiced pudding. Top it off with fresh apple slices and a sprinkle of cinnamon, and you’ve got a dessert that looks (and tastes) like it took way more effort than it did. Cozy Autumn Biscuit Pudding
Ingredients
- Pumpkin Buttercream:
- 1/2 cup salted butter (softend)
- 1 cup of icing sugar
- 1 tbsp pumpkin puree
- 4 cloves
- 1/2 inch knob of ginger
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp nutmeg
- Apple Cinnamon Compote:
- 1 apple (peeled and diced)
- 1/2 cup of brown sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp lemon
- Chai:
- 2 black tea bags
- 1 cinnamon stick
- 4-5 cardamon pods
- 3-4 cloves
- 3/4 cup milk
- Pudding
- 1 pack of Marie biscuits (or any other butter biscuit)
Directions
- Prepare the frosting: In a mortar and pestle, bruise the ginger and cloves together, then set aside.
- In a mixing bowl, cream the softened butter and icing sugar until smooth.
- Add the pumpkin purée, spices, and vanilla extract, mixing until you have a thick, spreadable frosting.
- Prepare the chai: In a pan, bring all the chai ingredients to a boil. Remove from heat, strain, and let it cool to room temperature.
- Prepare the apple cinnamon compote: Peel and finely dice the apple. In a saucepan over medium heat, combine the diced apple, brown sugar, spices, and vanilla.
- Once the apples have softened and small bubbles form, mash lightly to break up any large chunks.
- Remove from heat, set aside, and let cool.
- Assemble the pudding: In a deep baking dish, place a layer of biscuits, then pour about 1/4 cup of chai over them.
- Spread a 1/4-inch layer of frosting over the biscuits, smoothing it flat, then add a layer of apple compote.
- Repeat the layers to your desired height (at least two layers each), finishing with a layer of frosting on top. Garnish with fresh apple slices and a sprinkle of cinnamon.
- Refrigerate for at least an hour, then it’s ready to serve!
