Ingredients

1 medium potato
1 stalk of celery
1 carrot
1 cup of shredded cabbage
8-10 curry leaves
4 cloves of garlic
1 tbsp butter
1 cup of red lentils
1/2 tomato
3 cups of vegetable broth
1 tsp black pepper
1 tsp salt

Directions

Roughly chop all the veggies.
In a pot, sauté curry leaves and garlic until fragrant, then add in the veggies.
Once softened, stir in the butter and lentils.
Pour in the broth, bring to a boil, then remove from heat. Use a hand blender to blend until thick and creamy.
Return to low-medium heat for a few more minutes, season with salt and pepper, then serve topped with a drizzle of cream and a sprinkle of chili flakes.
