Sri Lankan Vegetable Soup
Ingredients
- 1 medium potato
- 1 stalk of celery
- 1 carrot
- 1 cup of shredded cabbage
- 8-10 curry leaves
- 4 cloves of garlic
- 1 tbsp butter
- 1 cup of red lentils
- 1/2 tomato
- 3 cups of vegetable broth
- 1 tsp black pepper
- 1 tsp salt
Directions
- Roughly chop all the veggies.
- In a pot, sauté curry leaves and garlic until fragrant, then add in the veggies.
- Once softened, stir in the butter and lentils.
- Pour in the broth, bring to a boil, then remove from heat. Use a hand blender to blend until thick and creamy.
- Return to low-medium heat for a few more minutes, season with salt and pepper, then serve topped with a drizzle of cream and a sprinkle of chili flakes.
