Thinly sliced chicken thighs (or breasts if you’re feeling lean) get marinated in a zesty mix of Greek yogurt, lemon juice, and warming tandoori spices. After a quick sizzle in the pan, they’re tucked into soft buns or sourdough slices and topped with a homemade crunchy coleslaw that’s tangy, creamy, and just a little sweet. Tandoori Chicken Sandwich
Ingredients
- 2 boneless chicken thighs or breasts thinly sliced
- 1/4 cup plain high protein greek yogurt
- 1 tbsp lemon juice
- 1 tsp ginger-garlic paste
- 1 tsp garam masala
- 1 1/2 tbsp tandoori powder (if you don’t have tandoori powder combine: 1 tsp chili powder, 1/2 tsp turmeric, 1/2 tsp cumin, and 1/4 tsp smoked paprika)
- Salt, to taste
- 1 tsp oil for cooking
- For the sandwich:
- 2 sandwich buns, burger buns, or slices of sourdough
- 1/2 cup of homemade coleslaw (red cabbage, carrots, 1 tbsp low fat mayo, 1/2 tbsp red wine vinegar, s&p, 1 tsp sugar)
Directions
- In a bowl, mix yogurt, lemon juice, spices, and salt. Add sliced chicken and coat well. Let it marinate for at least 10 minutes while you prep the rest (or up to 24 hrs if you’re planning ahead).
- To prepare coleslaw simply combine ingredients and set aside.
- Heat oil in a pan over medium-high heat. Add the chicken and cook for 6–8 minutes until golden, slightly charred, and cooked through. Flip halfway. You want that sizzle and color!
- While the chicken cooks, lightly toast your bread or buns in the same pan for a minute or two for extra flavor.
- Assemble sandwich by spreading some butter on the buns, and then layering up your coleslaw then a few pieces of chicken. Serve up with some chips or fries and enjoy!
