Sri Lankan Mango Curry

- Start by cleaning and peeling the mangoes. Slice them into wedges and place them in a bowl of water with a generous amount of salt. Let them soak for at least 30 minutes. (If you’re using sweet, ripe mangoes, you can skip this step.)
- Next, heat some oil in a wok. Once hot, add curry leaves, red onion, garlic, ginger, and green chili. Sauté until fragrant, then add all the spices. Mix well and cook on medium heat for a few minutes.
- Add the drained mango wedges, followed by chopped jaggery (or brown sugar).
- Let it caramelize for about 5–8 minutes, then stir in the tamarind paste.
- Cook until the mangoes are soft and fully cooked through.
- Remove from heat, let it cool to room temperature, and serve with rice. Enjoy!
