Honestly, it’s so packed with flavour that it can easily double as a full meal (don’t worry, I won’t judge if you eat it for lunch, dinner, and snack time). The best part? Every bite hits that perfect balance of soft, crispy, and spicy-savoury goodness. Sri Lankan Beef Roti

Instructions
- Mix flour, salt, warm water, and oil. Knead into a soft dough, cover, and let rest for 30 minutes.
- In a pot, add beef, turmeric, ½ tsp salt, water, and curry leaves. Cook until the beef is tender and water is reduced.
- Fry onion, garlic, green chili, and cumin seeds in oil. Add curry powder, chili powder, chili flakes, and salt. Stir in the cooked beef, stock, and mashed potatoes. Cook until thick, then finish with lime juice.
- Roll out small circles of dough, place filling in the middle, and fold into a square or roll shape.
Fry on a pan with a little oil until golden and crispy on both sides.
