Instructions
- Start by making the sponge cake. Whisk the eggs and sugar together until stiff peaks form.
- Gently fold in the sifted flour and baking powder.
- Pour the batter into an 8-inch round, parchment-lined baking pan and bake at 350°F (175°C) for about 20 minutes.
- Remove the parchment, let the cake cool completely, then place it into a deep dish that can hold the other layers.
- For the mango mousse, whip the cream and icing sugar until thick peaks form.
- Gently fold in the mango pulp, adjusting the sweetness to your taste.
- Pour the mousse over the cooled cake, filling the pan to the top. Chill in the fridge for at least 4 hours.
- To make the mango gel, heat 50 ml of water and dissolve the gelatin in it.
Let it cool slightly before whisking it into the mango pulp and remaining icing sugar. It should be slightly thick. Pour the gel over the set mousse layer and refrigerate for another 2 hours. - Garnish with fresh mango slices and enjoy your tropical masterpiece!
