High Protein Burrito Bowls
Ingredients
- 500g of lean ground beef
- 4 cups of cauliflower rice
- 1/2 of cilantro
- 1 white onion diced
- 4 cloves of garlic
- 1 tbsp of cumin
- 2 tsp of chilli powder
- 1 tsp of paprika
- 1 tsp of salt
- 1 tsp pepper
- 1 tbsp of cayenne pepper hot sauce
- 1/2 avocado
- 1/2 cup cottage cheese
- 1 tsp of chilli powder
- 1 tsp of cumin
- 1/2 tsp of salt
- 1 cup of chopped lettuce
- 1/2 red onion
- 1 tomato
Directions
- Start by preparing the cauliflower rice: sauté garlic and onions until fragrant, then add the cauliflower rice.
- Let it cook for about 5 minutes or until softened. Stir in cilantro, salt, and pepper, then set aside.
- In a heated skillet, cook the beef with the remaining seasonings and hot sauce until fully cooked.
- For the guac, mash a ripe avocado with a pinch of salt.
- Make the taco sauce by mixing cottage cheese with chili powder, cumin, and salt.
- Assemble the bowls: start with a layer of cauliflower rice, followed by the seasoned beef.
- Top with chopped lettuce, diced tomato, red onion, a tablespoon of guac, and a drizzle of the cottage cheese taco sauce.
