Healthy Chicken Fried Rice
Ingredients
- 2 chicken breasts
- 3 eggs
- ¼ head of cabbage (shredded)
- 2 carrots (shredded)
- 1 white onion
- 2 cups of day old brown rice
- 1 tbsp soy sauce
- 1 tbsp turmeric
- 1 tsp black pepper
- 2 tsp salt
- 8-10 curry leaves
- 1 tbsp curry powder
Directions
- In a pot, bring the chicken breast to a boil and cook until fully done. Remove from heat and shred with a fork.
- In a wok, heat some oil and toss in the shredded chicken. Add turmeric, black pepper, and 1 tsp of salt. Once combined, remove from heat and set aside.
- Using the same wok, crack in 2 eggs and scramble them quickly. Remove from heat as soon as they are no longer wet and set aside.
- In the same wok, heat more oil and toast the curry leaves. Add onions, shredded cabbage, and carrots. Once the vegetables are softened, stir in the cooked rice, chicken, and scrambled eggs.
- Toss everything with soy sauce, curry powder, and the remaining 1 tsp of salt. Remove from heat and serve as is, or pair with your favourite curries!
