- Clean and separate the cauliflower into bite-sized pieces.
- Boil for about 5 minutes, then rinse with cold water and lay them out on paper towels to air-dry. You want these as dry as possible – moisture = less crispiness. *doing this step ahead of time and letting them dry overnight is the best move.
- In a bowl, whisk together all the batter ingredients. You’re looking for a thick consistency, just a bit thicker than whipping cream.
- Add the cauliflower to the batter and make sure every piece is evenly coated.
- Deep-fry in batches for 4–5 minutes until golden brown. Let them cool on a wire rack, then fry again for another 3 minutes to get that perfect crisp.
- For the sauce, heat some oil in a pan over medium-high. Add the onions, then the red chilies.
- Once softened, add the ginger, garlic, and green pepper. After a few minutes, add the remaining spices, soy sauce, and sweet and sour sauce.
- Remove from the heat and toss in the fried cauliflower, making sure each piece gets nicely coated.
- Garnish with chopped coriander and enjoy!
