Devilled Chicken Wraps
Ingredients
- Marinade
- 450g of chicken breast
- 1 tsp turmeric
- 1 tbsp chilli powder
- 1 tsp salt
- 1 tsp pepper
- Squeeze of lime
- Devilled chicken
- 4 cloves of garlic
- 1 inch knob of ginger
- ½ cup of ketchup
- 1/2 red pepper
- ½ yellow pepper
- ½ red onion
- 1 tsp chilli flakes
- Sauce
- ½ cup greek yogurt
- 1 tsp ketchup
- 1 tsp chilli powder
- Squeeze of lime
- Wraps
- Whole wheat tortilla wrap
- Chopped lettuce
Directions
- Marinate the chicken with turmeric, chili powder, salt, pepper, and lime. Let it sit for at least 30 minutes.
- Sauté the chicken until fully cooked, then set it aside.
- In the same pan, sauté garlic and ginger, then toast some chili flakes until fragrant.
- Stir in ketchup and an extra teaspoon of chili powder, followed by the chopped peppers and red onion.
- Once the veggies have softened, add the chicken back in and coat it well. Remove from heat.
- For a quick sauce, mix Greek yogurt, ketchup, chili powder, and lime juice.
- Assemble the wraps using whole wheat tortillas. Start with a bed of chopped lettuce, then add the cooked chicken and veggies.
- Wrap in tin foil for easy meal prep and enjoy later or now!
