Biscuit Pudding

- In a large bowl, using a mixer, combine the room temperature butter and icing sugar, one cup at a time.
- Keep mixing as you add in the instant coffee, cocoa powder and vanilla extract.
- Whip the ingredients together till you get a smooth, thick, creamy consistency and the buttercream can hold its shape. Make sure not to over mix. Set this aside in the fridge for at least 30 mins.
- Prepare your Maria biscuits, by dipping them one by your bowl of milk and lining a shallow baking dish. You want to create a nice double layer of Maria biscuits on the bottom of your serving dish.
- Spread a thick layer of your chilled buttercream over the Maria biscuits.
- Repeat this process of alternating layers of Maria biscuits and buttercream, until you’ve reached the top of your serving dish.
- Top with your choice of nuts, a dusting of cocoa powder, or crumbled biscuits.
- Chill in the fridge for at least 4 hours before serving.
