Sri Lankan Chicken Fried Rice

This Sri Lankan–inspired chicken fried rice is the kind of meal that instantly slows everything down. Warm curry spices, fragrant curry leaves, and soft scrambled eggs wrap around tender chicken and veggies, while soy sauce and broth bring that savory, cozy depth. Every bite is comforting, familiar, and just spicy enough to keep things interesting.

Description

Sri Lankan–inspired chicken fried rice with warm spices and cozy flavours—the perfect comfort meal to quiet an overactive new-year brain.

Ingredients

Instructions

  1. Dice all the vegetables and cube the chicken thighs.
  2. Heat oil in a hot wok, then add the chicken and let it brown.
  3. Once golden, add the curry powder, chilli powder, turmeric, salt, and black pepper. Cook until the chicken is fully done, then remove it from the wok and set aside.
  4. In the same wok, add a little more oil and toss in the curry leaves. Once fragrant, add the onions, green chilli, ginger, and garlic. Sauté until softened, then add the diced carrot and cook for a few minutes.
  5. Push the vegetables to the sides to create a well in the center. Crack in the eggs and let them cook halfway, then gently scramble, keeping them separate from the vegetables. Once the eggs are fully cooked, mix everything together.
  6. Add the cabbage, followed by the cooked chicken and rice. Drizzle in soy sauce and chicken broth, toss well to combine, and cook for a few more minutes until everything is heated through.
  7. Remove from heat and garnish with chopped green onions, toasted cashews, and a generous squeeze of lime. Ready to eat!
