Sri Lankan Pork Belly Curry – 6 Ingredients

Thick-cut pork belly gets slowly cooked in coconut milk, curry powder, cardamom, cinnamon, and tamarind until it’s deeply flavorful and ridiculously tender. The coconut milk melts into the spices, creating a savoury, slightly sweet, lightly tangy sauce that hugs every layer of pork. After soaking up all that goodness, it’s baked low and slow for 40 minutes, covered, so the flavours deepen and the pork stays juicy. The result? Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the pork belly generously with salt and pepper.
  3. In a cast iron pan, heat up oil and toast the cinnamon.
  4. Once fragrant toss in the sliced pork belly. Once its browned add in the remaining spices. Let that come together for at least 5 mins and then add the coconut milk.
  5. Cook for 5 more mins and then cover with tin foil and place in the oven for 40 mins or till the oil separates. Give it stir about half way through.
  6. Remove from the oven, discard the cinnamon sticks and serve over some fluffy white rice.
