  1. Place eggs in a pot, cover with water, and boil for 8–10 minutes. Peel and set aside.
  2. In a pan, heat a little oil and sauté chopped onion (if using) and curry leaves until fragrant.
  3. Stir in chili powder, cumin, salt, and pepper. Cook for 1–2 minutes to release the flavors.
  4. Pour in the coconut milk and bring to a gentle simmer.
  5. Gently add the boiled eggs to the sauce and simmer for 5–10 minutes so the flavors soak in.
  6. Garnish with fried onion if you like and enjoy with rice or roti.
