After visiting Thailand, I cannot stop thinking about the amazing Khao Soi I had. I must have eaten this dish at least 6 times on my vacation. Its this thick creamy coconut curry served over soft and chewy noodles, topped with lots of fresh coriander and lime. It is sooo simple yet so addicting. I wanted to try re-creating a healthier version to enjoy guilt free!
This high-protein Khao Soi is a flavorful twist on the classic Thai-inspired curry noodle soup. High Protein Khao Soi
Ingredients
- 125g of egg noodles
- 3 tbsp of Thai red curry paste (I used Blue Dragon Brand)
- 1 ½ cup of coconut milk
- 1 tbsp of brown sugar
- 1 tbsp of fish sauce
- ½ tsp of salt
- 100g of chicken breast, cubed
- 1 shallot, sliced
- ½ lime
- coriander, for garish
- green onion for garnish
- Crispy egg noodles (optional)
Directions
- Boil the egg noodles according to the package instructions, drain, and set aside.
- Heat a wok over medium heat and toast the curry paste until fragrant.
- Stir in the coconut milk and mix until smooth. Add the cubed chicken, stirring frequently as it cooks quickly in the hot wok.
- Season with salt and adjust the spice level by adding more curry paste if desired. Remove from heat once the chicken is fully cooked.
- Plate the egg noodles and ladle the chicken curry over them.
- Finish with a squeeze of fresh lime juice, then garnish with coriander, sliced shallots, and crispy noodles for added texture.
