Healthy Chicken Kottu Roti

Healthy Sri Lankan Chicken Kottu is a vibrant and flavorful dish that brings the street food favorite into a wholesome, nutritious meal. This version features homemade whole wheat roti, giving the dish a heartier and fiber-rich base. Instead of the usual heavier ingredients, lean chicken breast is used in the curry, adding a protein-packed, low-fat twist. The shredded roti is stir-fried with colorful veggies, lean chicken curry, and fragrant spices like curry leaves, cumin, and turmeric, creating a delicious balance of flavors and textures.

This healthy kottu offers all the bold, savoury goodness of the classic dish but with a lighter, feel-good touch. Perfect for those who want a comforting yet nutritious meal!

Healthy Chicken Kottu Roti

Ingredients

  • Roti
  • 3 cups of whole wheat flour
  • 2 tsp salt
  • 3 tbsp oil
  • Oil (to cover roti)
  • Chicken Curry
  • Kottu Roti
  • 1 cup shredded carrot
  • ½ cup green onion
  • 2 jalapenos 
  • 3 eggs
  • 6-7 rotis (chopped) 
  • 2 cups of chicken curry

Directions

  1. Roti: In a bowl, mix whole wheat flour, salt, and oil. Knead for a few minutes until a smooth dough forms.
  2. Divide the dough into 12 balls, place them in a deep dish, drizzle with oil, and cover with cling wrap.
  3. Let it rest for an hour.
  4. Once ready, roll out each ball into a thin disc. Heat a pan with a little oil and fry each roti until golden brown on both sides.
  5. Chicken Curry: Prepare the chicken curry following the steps from this recipe.
  6. Kottu: In a wok, heat some oil and sauté shredded carrots, green onions, and chopped jalapeños until fragrant.
  7. Push the veggies to the side and crack the eggs into the center. Scramble the eggs, and once they’re fully cooked, mix them with the veggies.
  8. Add chopped whole wheat rotis and the prepared chicken curry to the wok.
  9. Season with extra salt if needed.
  10. Stir everything together until well combined, then remove from heat and enjoy!
