Healthy Chicken Kottu Roti
Ingredients
- Roti
- 3 cups of whole wheat flour
- 2 tsp salt
- 3 tbsp oil
- Oil (to cover roti)
- Chicken Curry
- Kottu Roti
- 1 cup shredded carrot
- ½ cup green onion
- 2 jalapenos
- 3 eggs
- 6-7 rotis (chopped)
- 2 cups of chicken curry
Directions
- Roti: In a bowl, mix whole wheat flour, salt, and oil. Knead for a few minutes until a smooth dough forms.
- Divide the dough into 12 balls, place them in a deep dish, drizzle with oil, and cover with cling wrap.
- Let it rest for an hour.
- Once ready, roll out each ball into a thin disc. Heat a pan with a little oil and fry each roti until golden brown on both sides.
- Chicken Curry: Prepare the chicken curry following the steps from this recipe.
- Kottu: In a wok, heat some oil and sauté shredded carrots, green onions, and chopped jalapeños until fragrant.
- Push the veggies to the side and crack the eggs into the center. Scramble the eggs, and once they’re fully cooked, mix them with the veggies.
- Add chopped whole wheat rotis and the prepared chicken curry to the wok.
- Season with extra salt if needed.
- Stir everything together until well combined, then remove from heat and enjoy!
