20 min Salmon Bowl
Ingredients
- 4 salmon fillets
- 1/2 cup low fat mayo
- 2 cloves of diced garlic
- 1 tsp turmeric
- 1 tsp chili flakes
- 1 tsp salt
- 1 tsp chili powder
- squeeze from half a lime
- Bowl Ingredients:
- 1 cup of cooked white rice
- 1/2 cup of diced tomato
- 1/2 cup of diced cucumbers
- 1/2 cup of edamame
Directions
- Clean and pat dry the salmon fillets with a paper towel, then place them on a parchment-lined tray.
- In a bowl, mix all the seasoning ingredients until well combined, then rub the mixture evenly over the fillets.
- Pop the tray into a preheated oven at 420°F and bake for 15 minutes, or until the salmon is perfectly flaky.
- Pair with rice and fresh veggies—I went with diced tomatoes, edamame, and cucumbers for a refreshing crunch!
