Easy & Flavourful rice
Whenever I need a break from plain rice and crave something hearty and cozy, I whip up Sri Lankan Spiced Rice. It captures all the best island flavors in one simple, delicious dish.
Start with some fluffy Basmati rice, the kind that’s just begging to soak up all the spicy goodness. We’re talking cinnamon, cardamom, cloves, pandan, and curry leaves – like a spice rack reunion! Add in some sautéed onions, garlic, and ginger to get things sizzling, then toss in a couple of green chilies if you’re feeling daring.
Whether you’re pairing it with a zesty curry, a fresh salad, or just digging in solo, Sri Lankan Spiced Rice is your ticket to flavour town. It’s easy to make, packed with personality, and guaranteed to impress. Plus, it’s the perfect go-to when your fridge is practically empty.
Spiced Rice
Ingredients
- 1 cup of basmati rice
- 1 pandan leaf
- 8-10 curry leaves
- 1 cinnamon stick
- 1 tbsp curry powder
- 1 tsp salt
- 1 white onion
- 5-6 cloves
- 1 can coconut milk
Directions
- Rinse the rice until the water runs clear.
- In a pan, heat oil and toss in curry leaves, mustard seeds, and a cinnamon stick.
- Once aromatic, add sliced onions and pandan leaves.
- Stir in the rice and toast for a few minutes before adding coconut milk.
- Season with salt and curry powder.
- Cover and simmer until the rice is fully cooked.
- Enjoy on its own or with some lunu miris.
