EASY | NO BAKE DESSERT
One of my favourite desserts growing up was my mum’s famous Biscuit Pudding. It’s become a timeless classic that could always be found at the sweets table for every family event, birthday party and holiday. Over the years, my mum has perfected this recipe making it one of the easiest desserts to whip up and impress a crowd. And the best part is, there’s no baking involved!
This delectable dessert combines the flavours of crunchy buttery biscuits and velvety coffee rich buttercream. The contrast between the layers of crumbly cookies and sweet cream, make this one of the most addicting desserts. The key to making this easy pudding is using milk soaked Maria biscuits. By soaking the biscuits in milk allows the buttercream to blend well with the subtle buttery flavour of the tea biscuits.
tips & tricks
Tip #1: Quickly soak each biscuits in cold milk and lay on a serving dish to create layers of two biscuits thick.
Tip #2: Buttercream can sometimes get very technical, are you mixing too much, are you mixing too little? My best tip is to make sure your butter has softened at room temperature for at least a few hours. This will ensure it nicely combines with the icing sugar, and will guarantee a creamy finish. If your butter is too cold, it will crumble when trying to whip in the icing sugar. The same logic applies for your eggs. Using room temperature ingredients allows you to combine your ingredients well. Especially since this is a no-bake dish, you don’t want your guests tasting bits of butter but rather leave them wanting another bite of this decadent goodness.
Tip #3: Chill the Biscuit Pudding for a minimum of 4 hours to allow the layers to set and flavours to meld together. A sprinkling of cocoa powder or crushed nuts right on top is the perfect finishing touch.

- In a large bowl, using a mixer, combine the room temperature butter and icing sugar, one cup at a time.
- Keep mixing as you add in the instant coffee, cocoa powder and vanilla extract.
- Whip the ingredients together till you get a smooth, thick, creamy consistency and the buttercream can hold its shape. Make sure not to over mix. Set this aside in the fridge for at least 30 mins.
- Prepare your Maria biscuits, by dipping them one by your bowl of milk and lining a shallow baking dish. You want to create a nice double layer of Maria biscuits on the bottom of your serving dish.
- Spread a thick layer of your chilled buttercream over the Maria biscuits.
- Repeat this process of alternating layers of Maria biscuits and buttercream, until you’ve reached the top of your serving dish.
- Top with your choice of nuts, a dusting of cocoa powder, or crumbled biscuits.
- Chill in the fridge for at least 4 hours before serving.
