- Preheat your oven to 175°C (350°F) and line a baking tray with baking paper. Roughly crush the Maria biscuits into small pieces (not dust — you want texture) and set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the vanilla extract and egg, then mix until fully combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, sea salt, espresso powder, and cocoa powder. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Fold in the dark chocolate chips.
- Scoop the dough onto the prepared tray, leaving space to spread. Bake for 8–10 minutes, until the cookies are just set but still soft in the center.
- As soon as they come out of the oven, gently press the crushed Maria biscuits into the tops of the warm cookies. Let the cookies cool completely – this is important before filling.
- Beat the softened butter until smooth. Gradually add the icing sugar, espresso powder, vanilla extract, and milk. Beat until light, fluffy, and spreadable.
- Flip half the cookies over, spread a generous layer of filling on the flat side, then sandwich with another cookie. Press gently so the filling reaches the edges.
- Serve immediately or chill slightly for a firmer bite. Either way, it’s rich, nostalgic, and dangerously good.
