The perfect little savoury bite for a Friday night snack (or honestly, anytime you need comfort food with a kick). 🧅✨ With onions on sale at No Frills, I couldn’t resist turning them into another seeni sambol creation. Three onions, slowly cooked down with curry leaves, tamarind, and a mix of spices, until they transform into that signature sweet-spicy, jammy goodness.
Instead of overcomplicating things, I tucked the sambol into flaky store-bought puff pastry (because making puff from scratch? absolutely not), layered in slices of boiled egg and melty cheddar, then brushed with egg wash for that golden glow. After a quick bake, out comes the dream combo: crispy pastry, gooey cheese, rich egg, and that caramelized onion sambol bringing all the flavour. 🥟🔥

Seenie Sambol Egg & Cheese Puffs

Flaky puff pastry filled with sweet-spicy seeni sambol, cheddar, and egg—your new favourite Sri Lankan-inspired snack!

- Make the sambol – Sauté onions and curry leaves in oil until golden. Add curry powder, chilli powder, and chilli flakes.
- Stir in tamarind paste, sugar, water, salt, and pepper. Cook down until dark, sticky, and jammy.
- Slice the hardboiled eggs. Cut cheese slices into small squares.
- Cut puff pastry into squares. Add a spoon of sambol, a slice of egg, and a piece of cheese. Fold and seal the pastry, then brush with beaten egg.
- Bake at 400°F (200°C) for 15–18 minutes, until golden and puffed.
