Malum is a kale based salad that gets all its flavour from the shredded coconut bypassing the need for traditional dressing. It’s a wonderfully uncomplicated side dish, compromising just four ingredients that will get you to love kale and eat your leafy greens. It’s a gorgeous and vibrant looking dish that will for sure add a colourful flare to your dinner. 

Malum is a great dish that pairs well with another meat based curry, making it an ideal accompaniment. If you’re not a fan of a meat pairing, it can also be eaten with plain rice for a simpler yet equally satisfying option.  

In this recipe you will use equal parts of kale and shredded coconut and combine some red onion and chili to give you those subtle hits of spicy flavour. The trick is to chop your kale as thin as possible so it will blend well with the coconut. To capture a very authentic flavour, I would recommend using a fresh coconut as it gives this dish more texture and a stronger taste. But if you are tight on time, frozen shredded coconut works just as great. 

Once prepared, Malum keeps well in the refrigerator for up to a week. It’s important to note that this dish should not be reheated; instead, it is best enjoyed cold alongside a serving of warm rice.

Description

Discover the simplest yet tastiest vegan kale salad with this must-try recipe! Finely chopped kale, combined with an equal blend of coconut and infused with traditional Sri Lankan herbs, creates a healthy and flavourful weeknight meal.

Ingredients

• Kale bunch
• 400g shredded coconut (frozen or fresh)
• 1/2 red onion
• 2 green chili
• 1 tbsp cooking oil
• 1/2 lime

Instructions

1. Give the kale a good wash, then pat it dry with a paper towel, making sure to get rid of all the moisture.
2. Finely chop kale, dice onion and green chili.
3. In a skillet; heat oil over medium heat. Toss in chopped kale, shredded coconut, diced onion, and green chili.
4. Mix gently and once the kale starts to glisten (approximately 3-5mins) remove from heat.
5. Let Malum cool to room temperature and squeeze lime over top. Ready to serve with rice and spicy curry!
