VEGAN | EASY DESSERT

TIPS & TRICKS
TIP #1: If you can’t find coconut jaggery, no worries! Just swap it with brown sugar and add a tablespoon of molasses to achieve the perfect texture and flavour.

Coconut Custard | Watalappan
Ingredients
- 225g jaggery (sub with brown sugar)
- 5-6 cardamon pods
- 3-4 cloves
- ½ cup sugar
- 1 cinnamon stick
- 5 eggs
- 1 tsp vanilla extract
- ½ cup of thick coconut milk
- 1 tsp nutmeg
- Toasted coconut shavings (optional)
Directions
- In a pot, combine the jaggery, spices, vanilla extract, and sugar. Heat over medium heat, whisking until the jaggery melts and everything is well combined.
- Once melted, remove from heat and let it cool slightly before stirring in the thick coconut cream.
- In a separate bowl, whisk the eggs until smooth, then slowly add the jaggery mixture while continuing to whisk.
- Mix until fully combined, then strain to remove any whole spices.
- Pour the mixture into two ramekins and cover with foil. Place the ramekins in a deep baking dish, and carefully pour hot water into the dish until it reaches about ¾ of the way up the sides of the ramekins.
- Bake at 400°F for 45 minutes to an hour, or until the custard sets and has a spongy texture.
- Let it cool completely and garnish with toasted coconut shavings!
